Also known as Bishops Weed, Ajowan is a favorite spice in India with a flavor similar to thyme due to the presence of the essential oil thymol. Ajowan is particularly popular in Indian recipes like pastries, snacks and breads. For example, the Bengali spice mixture panch phoron is sometimes enhanced with ajowan.

Uses:

Mix crushed Ajowan with other spices such as Cumin and Coriander to season chicken and fish. It also goes well with lentils, beans, and root vegetables.
