Butternut Squash
The butternut Squash (Cucurbita moschata) is one of the most common types of winter squashes available in most supermarkets. It is beige in color and shaped similar to a vase. It has a bulbous end with a pale creamy skin. Its fin-textured deep orange flesh has a sweet nutty flavor similar to sweet potatoes or pumpkin. As it ripens, the flesh becomes increasingly deep orange with richer and sweeter flavor. Although it is considered a winter squash, it is available year round with its peak season being early fall throughout winter. Butternut Squash can be prepared in a variety of ways including: roasted, pureed or mashed. Some of most popular applications are in soups, casseroles, breads and other baked goods. Complimentary spices include: Allspice, anise seed, brown sugar, butter, cardamom, cinnamon, cloves, cumin, ginger, mace, nutmeg, paprika, sage, savory, tarragon, thyme and turmeric. Wine Pairings: Pinot Grigio, Chenin Blanc and Albariños.
